Ingredients
  

For the Potatoes
  • 4 large Russet potatoes Scrubbed and poked with holes
For the Shrimp
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning Adjust to taste
  • 2 tablespoons olive oil
Toppings
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup sliced green onions For garnish
  • Salt and pepper to taste
  • Optional: cooked bacon bits For an extra crunch!

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Scrub the Russet potatoes and poke holes in each with a fork. Sprinkle with salt and wrap in foil.
Baking
  1. Bake the potatoes directly on the oven rack for 45-60 minutes, or microwave for 10-12 minutes, turning halfway.
Cooking Shrimp
  1. In a bowl, toss the shrimp with olive oil and Cajun seasoning until coated.
  2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink and opaque.
Assembly
  1. Once the potatoes are fully cooked, slice them open and fluff the insides with a fork. Season with salt and pepper.
  2. Top each potato with shrimp, shredded cheddar cheese, sour cream, and green onions.
