Preparation
- Start by patting your flank steak dry and season it generously with salt and pepper.
Grilling
- Preheat your grill to medium-high heat and coat it with a splash of olive oil.
- Place the seasoned flank steak on the grill and cook for about 5-7 minutes on each side.
Chimichurri Sauce
- While the steak is grilling, combine parsley, cilantro, garlic, red pepper flakes, and salt in a bowl.
- Drizzle in red wine vinegar and olive oil, mixing until well combined. Taste and adjust seasoning.
Serving
- Once the steak is cooked to your desired doneness, remove it from the grill and let it rest for about 5 minutes.
- Slice against the grain and plate the steak, drizzling generously with chimichurri sauce.
Notes
Don’t be afraid to use the grill marks as a guide! If they're pretty, your dinner is already 50% more impressive. Leftover chimichurri sauce can be used on other meats, grilled veggies, or as a dip. If the sauce looks a bit lumpy, embrace it; lumpy means homemade and cozy!
