  • 2 tablespoons soy sauce
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon honey or agave syrup for a vegan option
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated or minced
  • 1 carrot, grated
  • 1 bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1 head iceberg or butter lettuce for wrapping
  • sesame seeds for garnish, optional
  • sriracha sauce if you like a spicy kick

Method
 

Cooking the Filling
  1. In a large non-stick skillet over medium heat, add the ground chicken. Cook until it starts to brown and is cooked through, breaking it up with a spatula as you go (about 5-7 minutes).
  2. Stir in soy sauce, teriyaki sauce, honey, minced garlic, and ginger. Let everything mingle and simmer for about 2-3 minutes until the mixture thickens a bit.
  3. Toss in the grated carrot and diced bell pepper, mixing well to combine. Cook for another 2-3 minutes, allowing the veggies to soften while still maintaining that delicious crunch.
Assembling the Wraps
  1. Carefully separate the lettuce leaves, creating cups for your filling.
  2. Spoon the flavorful chicken mixture into each cup, topping with green onions and sesame seeds if desired.
Serving
  1. Drizzle with sriracha sauce if you’re feeling adventurous and serve immediately.

Notes

You can prepare the chicken mixture ahead of time. Just store it in an airtight container in the fridge and assemble the wraps when you’re ready to eat. Pair these wraps with a side of jasmine rice or quinoa to complete your dinner.
