  • 3 pieces eggs the magic binding agents!
  • 1 cup shredded cheese because flavor!
  • 1/2 cup Greek yogurt for creaminess
  • 1 teaspoon baking powder helps everything rise!

  • optional herbs and spices of your choice get wild!

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the three eggs until they’re frothy.
  3. Add in the Greek yogurt, salt, and pepper and mix well.
  4. Gently fold in the almond meal, shredded cheese, and baking powder. Optionally, add herbs like thyme and rosemary.
  5. Pour the batter into a greased baking dish, spreading it out evenly.
Baking
  1. Place your dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Serving
  1. Let the dish cool for a few minutes before slicing. Enjoy warm, possibly with a crisp salad.

Notes

If you have any leftovers, keep them in an airtight container in the fridge for up to three days. To reheat, pop them in the oven or microwave. Feel free to mix and match cheeses for different flavors. For a vegan option, use flaxseed meal mixed with water as an egg substitute.
