Wet Ingredients
  • 1 cup buttermilk Substitute: 1 cup milk + 1 tablespoon vinegar or lemon juice
  • 1 ripe banana The riper, the better!
  • 1 large egg
  • 2 tablespoons melted butter For richness
  • Cooking spray or more butter For greasing the pan

Preparation
  1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  2. In a separate bowl, mash the ripe banana until smooth. Add buttermilk, egg, and melted butter to the mashed banana and mix until combined.
  3. Pour the wet ingredients into the dry mix and gently fold together. A few lumps are fine; avoid over-mixing.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat and grease with butter or cooking spray.
  2. Ladle about ¼ cup of pancake batter onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  3. Flip pancakes and cook for another 1-2 minutes until golden brown. Repeat with remaining batter.
Serving
  1. Stack pancakes on a plate and serve with maple syrup, fresh fruit, or a dollop of whipped cream.

Notes

Don't flip pancakes too early; wait until bubbles form for a fluffy texture. Add-ins like chocolate chips or nuts can jazz up the flavor!
