  • 1 cup shredded cheese cheddar is preferred, but feel free to experiment
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup green onions, chopped for added flavor
  • Salt and pepper to taste
  • Cooking spray or oil for baking

Method
 

Preparation
  1. Preheat your oven to 400°F (205°C) and gather all ingredients.
  2. In a large mixing bowl, combine the mashed potatoes, cheese, eggs, flour, green onions, salt, and pepper. Mix until well combined, being careful not to overmix.
  3. Use your hands or a small ice cream scoop to form the mixture into golf ball-sized puffs and place them on a parchment-lined baking sheet.
  4. Lightly spray the tops with cooking spray.

  1. Bake in the preheated oven for 20–25 minutes or until golden brown.

Notes
