- Preheat your oven to 400°F (205°C) and gather all ingredients.
- In a large mixing bowl, combine the mashed potatoes, cheese, eggs, flour, green onions, salt, and pepper. Mix until well combined, being careful not to overmix.
- Use your hands or a small ice cream scoop to form the mixture into golf ball-sized puffs and place them on a parchment-lined baking sheet.
- Lightly spray the tops with cooking spray.

- Bake in the preheated oven for 20–25 minutes or until golden brown.

Notes
You can use leftover mashed potatoes to avoid waste. Feel free to add herbs, spices, or cooked bacon for a gourmet touch.
