- In a medium-sized saucepan, melt the butter over medium heat.
- Add the thinly sliced onions and stir occasionally for about 15-20 minutes until they are golden brown and fragrant.
- Once the onions are caramelized, add the rice and stir for a couple of minutes to coat it in the butter.
- Pour in the vegetable or beef broth, garlic powder, and soy sauce. Stir and bring to a boil.
- Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 18-20 minutes.
- After 20 minutes, remove from heat and let it sit, covered, for 5 minutes. Season with salt, pepper, and sprinkle fresh parsley before serving.
Notes
If rice is sticky, fluff with a fork. You can also add cheese before serving. Consider making a batch without onions for picky eaters.
