  • 1 cup white rice
  • 2 tablespoons butter Butter makes everything better!
  • 1 large onion, thinly sliced
  • 2 cups vegetable broth (or beef broth) Use beef broth for a richer flavor.
  • 1 teaspoon garlic powder
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional) Helps with presentation!

Method
 

Preparation
  1. In a medium-sized saucepan, melt the butter over medium heat.
  2. Add the thinly sliced onions and stir occasionally for about 15-20 minutes until they are golden brown and fragrant.
  3. Once the onions are caramelized, add the rice and stir for a couple of minutes to coat it in the butter.
  4. Pour in the vegetable or beef broth, garlic powder, and soy sauce. Stir and bring to a boil.
  5. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 18-20 minutes.
  6. After 20 minutes, remove from heat and let it sit, covered, for 5 minutes. Season with salt, pepper, and sprinkle fresh parsley before serving.

Notes

If rice is sticky, fluff with a fork. You can also add cheese before serving. Consider making a batch without onions for picky eaters.
