  • 1 pound ground beef
  • 1 cup breadcrumbs feel free to use gluten-free!
  • 1 small onion, diced the star of the show!
  • 1 cup Swiss cheese, shredded because who doesn’t love cheese?
  • 2 large eggs
  • 1 cup French onion dip adds a ton of flavor
  • 2 cloves garlic, minced because garlic makes everything better
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the ground beef, breadcrumbs, diced onion, shredded Swiss cheese, eggs, French onion dip, garlic, salt, and pepper. Use your hands to combine everything until well mixed.
  2. Form the mixture into a loaf shape.
Cooking
  1. Lightly grease your slow cooker. Place the formed loaf into the cooker. Cover and cook on low for about 6-7 hours or on high for 3-4 hours.
  2. During the last 15 minutes of cooking, sprinkle extra Swiss cheese on top and cover until melted.
  3. Remove the meatloaf from the slow cooker, let it rest for a few minutes, then slice and serve.

Notes

Don't worry if your loaf looks a little lumpy; it adds character. For a flavor twist, try adding chopped herbs like parsley or thyme. Leftovers make excellent sandwiches for lunch the next day.
