- In a large bowl, combine the ground beef, breadcrumbs, diced onion, shredded Swiss cheese, eggs, French onion dip, garlic, salt, and pepper. Use your hands to combine everything until well mixed.
- Form the mixture into a loaf shape.
Cooking
- Lightly grease your slow cooker. Place the formed loaf into the cooker. Cover and cook on low for about 6-7 hours or on high for 3-4 hours.
- During the last 15 minutes of cooking, sprinkle extra Swiss cheese on top and cover until melted.
- Remove the meatloaf from the slow cooker, let it rest for a few minutes, then slice and serve.
Notes
Don't worry if your loaf looks a little lumpy; it adds character. For a flavor twist, try adding chopped herbs like parsley or thyme. Leftovers make excellent sandwiches for lunch the next day.
