Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat together the granulated and brown sugars, then add vegetable oil until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually fold in the dry mix to the wet mix until just combined. Gently fold in the diced apples and nuts.
Baking
- Pour the batter into a greased and floured 9x13 inch baking pan.
- Bake for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
Notes
Mix sweet and tart apples for the best flavor. Store covered at room temperature for up to 3 days or refrigerate for a week. Slice and wrap in plastic to freeze for longer storage.
