Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
Main Ingredients
  • 2 cups peeled, diced apples
  • 1 cup chopped nuts (walnuts or pecans, optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat together the granulated and brown sugars, then add vegetable oil until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually fold in the dry mix to the wet mix until just combined. Gently fold in the diced apples and nuts.
Baking
  1. Pour the batter into a greased and floured 9x13 inch baking pan.
  2. Bake for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Mix sweet and tart apples for the best flavor. Store covered at room temperature for up to 3 days or refrigerate for a week. Slice and wrap in plastic to freeze for longer storage.
