For the Cod
  • 4 fillets cod fillets (fresh or thawed)
  • 1 teaspoon olive oil Just enough to drizzle on the fish
  • Salt and pepper to taste
For the Sauce
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the cod fillets with salt, pepper, and a drizzle of olive oil.
Making the Sauce
  1. In a skillet over medium heat, combine the halved cherry tomatoes and minced garlic. Sauté for about 3-5 minutes.
  2. Stir in the chopped basil, lemon zest, and juice, letting everything mingle in the pan for another minute.
Cooking the Cod
  1. Place the seasoned cod fillets in a baking dish and pour the tomato basil sauce over the top.
  2. Bake in the preheated oven for about 12-15 minutes, or until the cod flakes easily with a fork.
Plating
  1. Carefully plate the cod with a generous helping of the sauce. Garnish with a sprig of basil if desired.

Notes

If your sauce looks lumpy, it's just the natural goodness of crushed tomatoes. Serve over rice or pasta for picky eaters. You can prepare the sauce in advance and store it in the fridge.
