Method
Making the Crust
- In a large bowl, combine the flour, salt, and sugar.
- Add the chilled butter to the flour mixture. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- Slowly add cold water, one tablespoon at a time, mixing just until the dough holds together.
- Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Making the Filling
- In a bowl, mix diced apples or peaches with sugar, cinnamon, and lemon juice.
- Let it sit for about 10 minutes to allow the flavors to meld.
Assembling the Pies
- On a floured surface, roll out the dough to about 1/8 inch thick.
- Using a round cutter or a glass, cut out circles about 4-5 inches in diameter.
- Place a spoonful of the fruit filling in the center of each circle.
- Fold the dough over to create a semi-circle and crimp the edges with a fork.
Frying Time!
- Heat about an inch of oil over medium heat.
- Gently place a few pies in the hot oil, cooking until golden brown on both sides, about 2-3 minutes per side.
- Remove them and place on paper towels to drain any excess oil.
A Sweet Finish
- While warm, dust the pies with powdered sugar and serve them to the family.
Notes
Don't skimp on chilling the dough for a flaky crust! Feel free to mix and match fruits.
