Ingredients
  

For the Pie Crust
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 0.5 cups unsalted butter, chilled and cubed
  • 6-8 tablespoons cold water Add gradually until dough holds together.
For the Filling
  • 2 cups peeled and diced apples or peaches (or a combo of both)
  • 0.5 cups sugar Adjust based on the sweetness of your fruit.
  • 1 teaspoon cinnamon Optional
  • 1 tablespoon lemon juice
For Frying
  • Oil (vegetable or canola) for frying
For Dusting
  • Powdered sugar Optional, but recommended.

Method
 

Making the Crust
  1. In a large bowl, combine the flour, salt, and sugar.
  2. Add the chilled butter to the flour mixture. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
  3. Slowly add cold water, one tablespoon at a time, mixing just until the dough holds together.
  4. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.
Making the Filling
  1. In a bowl, mix diced apples or peaches with sugar, cinnamon, and lemon juice.
  2. Let it sit for about 10 minutes to allow the flavors to meld.
Assembling the Pies
  1. On a floured surface, roll out the dough to about 1/8 inch thick.
  2. Using a round cutter or a glass, cut out circles about 4-5 inches in diameter.
  3. Place a spoonful of the fruit filling in the center of each circle.
  4. Fold the dough over to create a semi-circle and crimp the edges with a fork.
Frying Time!
  1. Heat about an inch of oil over medium heat.
  2. Gently place a few pies in the hot oil, cooking until golden brown on both sides, about 2-3 minutes per side.
  3. Remove them and place on paper towels to drain any excess oil.
A Sweet Finish
  1. While warm, dust the pies with powdered sugar and serve them to the family.

Notes

Don't skimp on chilling the dough for a flaky crust! Feel free to mix and match fruits.
