Ingredients
  

Dough
  • 2 cups all-purpose flour plus more for dusting
  • 1/2 cup unsalted butter chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup ice water
Filling
  • 2 cups peeled and diced apples or peaches or a mix
  • 1 teaspoon cinnamon or more if you’re feeling spicy
  • 1 tablespoon lemon juice
For frying
  • Oil for frying
  • Powdered sugar for dusting optional

Method
 

Make the Dough
  1. In a large bowl, combine the flour, granulated sugar, and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap it in plastic wrap and chill in the fridge for about 30 minutes.
Prepare the Filling
  1. In another bowl, mix your diced apples or peaches with cinnamon and lemon juice. Let them sit for a few minutes to get extra juicy.
Roll Out the Dough
  1. Once chilled, roll out the dough on a floured surface to about 1/8 inch thick. Using a biscuit cutter or a glass, cut out circles (about 5 inches in diameter).
Fill and Seal
  1. Place a spoonful of the fruit filling in the center of each circle, fold them over, and seal by crimping the edges with a fork.
Fry Up Some Joy
  1. In a deep skillet, heat about 2 inches of oil over medium heat. Once the oil is hot, carefully fry the pies in batches for about 3-4 minutes on each side until golden brown.
Drain and Dust
  1. Once fried, place the pies on a paper towel to drain any excess oil, then sprinkle with powdered sugar if desired.

Notes

Keep your ingredients chill for a perfectly flaky crust. You can freeze un-fried pies for a later date. If you prefer a healthier option, you can bake these at 400°F (200°C) for about 15-20 minutes.
