Method
Make the Dough
- In a large bowl, combine the flour, granulated sugar, and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, until the dough comes together. Wrap it in plastic wrap and chill in the fridge for about 30 minutes.
Prepare the Filling
- In another bowl, mix your diced apples or peaches with cinnamon and lemon juice. Let them sit for a few minutes to get extra juicy.
Roll Out the Dough
- Once chilled, roll out the dough on a floured surface to about 1/8 inch thick. Using a biscuit cutter or a glass, cut out circles (about 5 inches in diameter).
Fill and Seal
- Place a spoonful of the fruit filling in the center of each circle, fold them over, and seal by crimping the edges with a fork.
Fry Up Some Joy
- In a deep skillet, heat about 2 inches of oil over medium heat. Once the oil is hot, carefully fry the pies in batches for about 3-4 minutes on each side until golden brown.
Drain and Dust
- Once fried, place the pies on a paper towel to drain any excess oil, then sprinkle with powdered sugar if desired.
Serve and Savor
- Gather your family around the table and indulge in these warm, crispy treasures.
Notes
Keep your ingredients chill for a perfectly flaky crust. You can freeze un-fried pies for a later date. If you prefer a healthier option, you can bake these at 400°F (200°C) for about 15-20 minutes.
