  • 4 pieces day-old croissants or fresh if you can't resist!
  • 1 cup granulated sugar the sweet stuff makes the world go round
  • 1 teaspoon cinnamon for that cozy vibe
  • 4 cups oil for frying or enough to fill your pot
  • to taste none powdered sugar for dusting because it’s a beignet, not a be-nothing!

Preparation
  1. Start by slicing your croissants in half horizontally or into triangles.
  2. In a shallow dish, mix together the granulated sugar and cinnamon.
  3. In a large, heavy skillet or a deep fryer, heat the oil over medium heat until it’s hot (about 350°F).
Cooking
  1. Carefully place a few croissant pieces in the hot oil, frying them for about 1-2 minutes per side until golden brown.
  2. Once fried, remove the beignets from the oil and drain them on paper towels.
  3. Coat them immediately with your cinnamon sugar mixture.
  4. Give them a generous dusting of powdered sugar.
  5. Serve immediately and enjoy warm!

Notes

Use day-old croissants for a flakier texture. Keep an eye on the oil temperature; too hot or too cool can affect your beignets. You can add nutmeg or use brown sugar for variation.
