Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 6 tablespoons unsalted butter, chilled and cubed
  • 1/4 cup cold water
For the Filling
  • 1 cup fruit preserves (apple, cherry, or other)
  • 1 cup chopped, cooked meat (chicken or sausage) for savory options
  • as needed cooking oil for frying (vegetable or canola)

Method
 

Preparation
  1. In a large bowl, combine the flour, salt, and sugar. Add the cubed butter and mix until it resembles coarse crumbs.
  2. Gradually add cold water, mixing until the dough comes together. Wrap it in plastic wrap and refrigerate for about 30 minutes.
Filling Preparation
  1. While the dough chills, prepare your filling. Use fruit preserves for a sweet filling or chopped cooked meat for a savory option. You can also combine sweet and savory fillings.
Assembly
  1. On a floured surface, roll out the dough to about 1/8 inch thick. Cut circles using a biscuit cutter or the rim of a glass—aim for about 4 inches in diameter.
  2. Place a spoonful of your filling onto one half of each dough circle. Leave some space around the edges to seal them properly.
  3. Fold the dough over for a half-moon shape and pinch the edges to seal. Crimp the edges with a fork for extra security.
Cooking
  1. In a deep skillet, heat about an inch of oil over medium heat until it reaches 350°F (175°C).
  2. Carefully place a few pies in the hot oil and fry them for 2-3 minutes per side, or until golden brown.
  3. Use a slotted spoon to remove them and let them drain on paper towels.
Serving
  1. Let the pies cool slightly before enjoying. Pair sweet pies with ice cream or savory pies with a drizzle of hot sauce.

Notes

You can use store-bought pie crust for a quicker alternative. If filling leaks during frying, it adds texture and flavor.
