- In a large skillet, heat the olive oil over medium heat.
- Add your diced potatoes to the skillet. Season lightly with salt and pepper and cook for about 10 minutes, stirring occasionally until they start to tenderize.
- Toss in the sliced onion and continue cooking for another 5 minutes.
- Add the smoked sausage and cook everything together for another 10 minutes, or until the potatoes are golden brown and fork-tender.
