Cooking Process
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add your diced potatoes to the skillet. Season lightly with salt and pepper and cook for about 10 minutes, stirring occasionally until they start to tenderize.
  3. Toss in the sliced onion and continue cooking for another 5 minutes.
  4. Add the smoked sausage and cook everything together for another 10 minutes, or until the potatoes are golden brown and fork-tender.
