Method
Make the Cookie Base
- Preheat the oven to 350°F (175°C). Cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually combine the dry ingredients into the wet mixture until a soft dough forms.
- Spread the dough onto a large baking sheet in a circular shape. Bake for about 15 to 20 minutes, or until the edges are lightly golden brown. Let it cool completely.
Create the Creamy Frosting
- In a bowl, combine the softened cream cheese, powdered sugar, and one teaspoon of vanilla extract. Mix until smooth and creamy.
Decorate with Fruit
- Once the cookie has cooled, spread the frosting generously over the top.
- Slice the fruits and arrange them on top of the frosting.
- Drizzle with honey or chocolate sauce if desired.
Notes
If you frost the cookie too soon, it may melt into a gooey mess. Use seasonal fruits for an engaging twist, and store leftovers tightly covered in the refrigerator.
