  • 2.5 cups 2 ½ cups all-purpose flour
  • 1 cup 1 cup granulated sugar
  • 1 cup 1 cup unsalted butter, softened
  • 1 unit 1 egg
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 teaspoon 1 teaspoon baking powder
  • 0.5 teaspoon ½ teaspoon salt
For the cream cheese frosting
  • 8 oz 8 oz cream cheese, softened
  • 0.5 cup ½ cup powdered sugar
  • 1 teaspoon 1 teaspoon vanilla extract
For the toppings
  • assorted Assorted fresh fruits (think strawberries, kiwi, blueberries, and bananas)
  • Optional: a drizzle of honey or chocolate sauce for an extra touch

Method
 

Make the Cookie Base
  1. Preheat the oven to 350°F (175°C). Cream together the softened butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing well until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually combine the dry ingredients into the wet mixture until a soft dough forms.
  4. Spread the dough onto a large baking sheet in a circular shape. Bake for about 15 to 20 minutes, or until the edges are lightly golden brown. Let it cool completely.
Create the Creamy Frosting
  1. In a bowl, combine the softened cream cheese, powdered sugar, and one teaspoon of vanilla extract. Mix until smooth and creamy.
Decorate with Fruit
  1. Once the cookie has cooled, spread the frosting generously over the top.
  2. Slice the fruits and arrange them on top of the frosting.
  3. Drizzle with honey or chocolate sauce if desired.

Notes

If you frost the cookie too soon, it may melt into a gooey mess. Use seasonal fruits for an engaging twist, and store leftovers tightly covered in the refrigerator.
