Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk Can substitute with regular milk + lemon juice or vinegar
Funfetti Decoration
  • 3/4 cup rainbow sprinkles Plus extra for decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 4-5 minutes).
  4. Mix in the eggs one at a time, ensuring fully incorporated before adding the next. Stir in the vanilla extract.
  5. Alternately mix in the buttermilk and the flour mixture starting and ending with the flour mixture.
  6. Gently fold in the rainbow sprinkles.
Baking
  1. Pour the batter into a greased loaf pan and bake for about 60-70 minutes, or until a toothpick inserted comes out clean.
  2. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
  3. Once completely cool, sprinkle additional sprinkles on top.
Serving
  1. Slice the loaf and serve with coffee or tea.

Notes

Be careful not to overmix the batter for a light texture. Store at room temperature for up to 3 days, wrapped tightly.
