Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 4-5 minutes).
- Mix in the eggs one at a time, ensuring fully incorporated before adding the next. Stir in the vanilla extract.
- Alternately mix in the buttermilk and the flour mixture starting and ending with the flour mixture.
- Gently fold in the rainbow sprinkles.
Baking
- Pour the batter into a greased loaf pan and bake for about 60-70 minutes, or until a toothpick inserted comes out clean.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
- Once completely cool, sprinkle additional sprinkles on top.
Serving
- Slice the loaf and serve with coffee or tea.
Notes
Be careful not to overmix the batter for a light texture. Store at room temperature for up to 3 days, wrapped tightly.
