Preparation
- Boil a pot of water for the pasta and chop the fresh parsley while waiting.
Cooking Pasta
- Once the water is boiling, add the pasta and cook according to package instructions (usually 8-10 minutes for al dente).
Prepare Garlic and Oil
- In a large skillet, pour in the olive oil and add the minced garlic. Sizzle over medium heat until fragrant and slightly golden.
Add Spice
- If desired, add the red pepper flakes for some heat.
Combine
- Reserve a cup of pasta water, drain the rest, and add the pasta directly to the skillet with garlic and oil. Toss together and add some reserved pasta water to create a silky sauce.
Season to Taste
- Add salt and pepper to taste, and mix in the freshly chopped parsley if using.
Serve
- Serve the Garlic and Oil pasta and enjoy!
Notes
The key to great garlic flavor is to prevent burning. Optionally, add a splash of cream or ricotta cheese for a creamy texture. You can use pre-minced garlic for convenience.
