Method
Cooking the Potatoes
- Start by boiling your chopped potatoes in a large pot of salted water. Cook until tender, about 15-20 minutes.
Infusing the Saffron
- In a small bowl, soak the saffron threads in a tablespoon of warm water.
Making the Saffron Mash
- Once the potatoes are done, drain them and return them to the pot.
- Add the milk (or cream) and soaked saffron to the potatoes, and mash until creamy and smooth.
- Taste and season with salt as needed. Set aside and keep warm.
Preparing the Garlic Butter
- In a large skillet, melt the unsalted butter over medium heat.
- Once melted, add the minced garlic and sauté for about a minute, just until fragrant.
- Stir in the lobster bites and season with salt and pepper.
- Cook for about 5-7 minutes or until the lobster is opaque and tender.
Serving
- On a plate, create a generous scoop of saffron mash and top it with the garlic butter lobster bites.
- Sprinkle with fresh parsley for garnish.
Notes
Don’t skip the garlic for maximum flavor. Substitutions for lobster include shrimp or scallops. Use a pinch of turmeric if saffron is unavailable. Remember, lumpiness in the mash is fine and offers rustic charm.
