Ingredients
  

For the Lobster Bites
  • 1 lb lobster meat (cooked, roughly chopped) Fresh is preferred but frozen can be used.
  • 1/2 cup unsalted butter
  • 4 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • Salt and pepper (to taste)
  • Fresh parsley (finely chopped for garnish)
For the Saffron Mash
  • 2 large potatoes (peeled and diced)
  • 1/4 cup cream (or milk for a lighter version)
  • 1/4 teaspoon saffron threads
  • Salt (to taste)
  • 2 tablespoons butter

Method
 

Preparation of Saffron Mash
  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  2. In a small bowl, steep the saffron threads in the cream (or milk) to release their flavor.
  3. Once the potatoes are ready, drain and return them to the pot. Add the saffron-infused cream, butter, and salt, then mash until smooth.
Preparation of Garlic Butter and Lobster
  1. In a large skillet, melt the unsalted butter over medium heat.
  2. Add in the minced garlic and sauté for about a minute until fragrant.
  3. Stir in the chopped lobster meat, ensuring it is coated in the garlic butter. Add the lemon juice, salt, and pepper.
  4. Cook for about 2-3 minutes until warmed through.
Serving
  1. Serve the garlic butter lobster atop a scoop of saffron mash.
  2. Garnish with fresh parsley.

Notes

Opt for fresh lobster for the best taste. Avoid overheating the lobster to retain tenderness.
