  • 1 pound lobster tails, thawed if frozen Fresh seafood is best, but frozen works too.
  • 1 pound sea scallops, patted dry Ensure they are dry for a nice sear.
Flavorings
  • 4 tablespoons unsalted butter Use extra melted butter for drizzling if desired.
  • 6 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes Adjust based on your spice tolerance.
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish
  • Lemon wedges, for serving

Method
 

Preparation
  1. If using lobster tails, carefully cut through the top shell with kitchen shears.
  2. Pat the scallops dry with a paper towel.
Cooking
  1. In a large pan over medium heat, melt the butter until bubbly, then add minced garlic and red pepper flakes, sautéing for about a minute.
  2. Place the lobster tails in the pan, cut side up, and cook for about 5 minutes, basting with garlic butter.
  3. Add the scallops, seasoning with salt and pepper. Cook for another 3-4 minutes, turning halfway, until they develop a golden crust.
  4. Once cooked, garnish with chopped parsley and serve with lemon wedges.

Notes

Patience is key to achieving the perfect sear on scallops. Preheat your pan before adding seafood for optimal results. You can prepare the garlic butter sauce in advance and store it in the fridge.
