Garlic Butter Lobster & Scallops

Ingredients
  

Seafood
  • 2 tails lobster tails (about 6 oz. each) Fresh or frozen, thaw overnight if frozen.
  • 1 lb scallops (fresh or thawed) Pat dry before cooking for a good sear.
Garlic Butter Sauce
  • 4 tablespoons unsalted butter Divided for cooking scallops and making garlic butter.
  • 4 cloves garlic, minced Adjust amount to taste.
  • 1 tablespoon lemon juice Freshly squeezed for better flavor.
  • to taste Salt and pepper Use to season scallops and garlic butter.
Garnish
  • to taste Fresh parsley, chopped For garnish before serving.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Using kitchen shears, cut the top of the lobster tails down to the tail fin. Pull the lobster meat out and lay it on top of the shell.
Cooking
  1. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Season the scallops with salt and pepper, and add them to the skillet. Sear for 2-3 minutes on each side until golden brown and cooked through.
  2. Remove the scallops from the skillet and set aside.
  3. In the same skillet, melt the remaining butter over medium heat. Add the minced garlic and stir until fragrant. Stir in the lemon juice and adjust salt and pepper as needed.
  4. Bring the scallops back into the skillet and gently nestle in the lobster tails. Spoon the garlic butter all over them.
  5. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the lobster is cooked through and the meat is opaque.
Serving
  1. Sprinkle chopped parsley over the top and serve hot. Consider serving with crusty bread to mop up the garlic butter.

Notes

If you can't find fresh lobster tails, frozen ones work beautifully too. Add red pepper flakes for spice or grated Parmesan for a rich flavor.
