Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the halved potatoes with salt, pepper, and 2 tablespoons of butter.
- Spread the potatoes out on a baking sheet in a single layer and roast for about 20 minutes or until golden and crispy.
Cooking the Steak
- Pat the ribeye steaks dry with paper towels and season both sides generously with salt and pepper.
- Heat a large skillet over medium-high heat and add 2 tablespoons of butter.
- Once the butter is melted, add the steaks and cook for about 4 minutes on each side for medium-rare.
- Just before the steaks are done, add the minced garlic and the remaining 2 tablespoons of butter, basting the steaks with the garlic butter.
- Remove the steaks from the skillet and let them rest for a few minutes.
- Slice the steaks against the grain and serve alongside the roasted potatoes, drizzling some garlic butter sauce over the top.
- Garnish with fresh parsley.
Notes
Resting the steaks for 5-10 minutes helps to keep them juicy. Use a meat thermometer for accurate steak doneness.
