Ingredients
  

Pasta and Chicken
  • 8 oz spaghetti (or your pasta of choice) Penne works great as well.
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
Flavorings
  • 4 cloves garlic, minced Garlic makes everything better!
  • 1/4 cup olive oil
  • 1/4 cup chicken broth (or white wine) For a zesty twist.
  • 1 tsp Italian seasoning For a herbal kick.
  • Salt and pepper to taste
  • Parmesan cheese, grated Optional but recommended.
  • Fresh parsley, chopped For garnish.

Method
 

Cooking the Pasta
  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set the pasta aside.
Sautéing the Chicken
  1. In a large skillet over medium heat, add olive oil. Once hot, add the chicken pieces. Season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes or until the chicken is golden brown and cooked through.
Adding Flavor
  1. Throw in the minced garlic and sauté for another minute, being careful not to burn it.
  2. Pour in the chicken broth (or wine) and allow it to simmer for about 2 minutes.
Combining Ingredients
  1. Add the cooked pasta directly to the skillet, tossing the ingredients to coat the noodles in the garlic sauce. If it looks dry, add a splash of reserved pasta water until you achieve the desired creaminess.
Finishing Touches
  1. Sprinkle in grated Parmesan cheese and stir until melted, adding chopped parsley right before serving.
Serving
  1. Dish it out in pretty bowls and enjoy your meal!

Notes

Feel free to substitute chicken with shrimp or tofu. Add veggies like spinach or cherry tomatoes for extra color. Store leftovers in an airtight container for up to 3 days, reheating gently.
