Ingredients
  

For the Mushroom Mixture
  • 8 oz mushrooms (any variety) cremini, shiitake, or button mushrooms
  • 2 tbsp olive oil for sauteing
  • 2 cloves garlic, minced add more if desired
  • 1 tsp fresh thyme or a pinch of dried thyme
  • Salt and pepper to taste
For the Toast
  • 4 slices rustic bread sourdough or whole grain works well
  • Grated Parmesan cheese optional
  • Fresh parsley, chopped for garnish

Method
 

Cooking
  1. In a large skillet over medium heat, heat the olive oil.
  2. Add the mushrooms, season with salt and pepper, and sauté until golden brown, about 5-7 minutes.
  3. Toss in the minced garlic and thyme; sauté for another 1-2 minutes until fragrant.
  4. While the mushrooms are cooking, toast the bread slices to your liking.
  5. Once toasted, spoon the sautéed mushroom mixture generously over each slice of bread.
  6. Sprinkle some grated Parmesan on top if desired.
  7. Garnish with chopped parsley and serve.

Notes

Feel free to experiment with different mushroom varieties, add red pepper flakes for heat, or pair with a salad for a full meal.
