  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • ¼ cup fresh parsley (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel.
  3. In a bowl, combine olive oil, garlic powder, oregano, paprika, salt, and pepper, and rub the mixture all over the chicken.
  4. Roll each chicken breast in the grated Parmesan cheese until generously coated.
Cooking
  1. Place the coated chicken in a baking dish and bake for about 25-30 minutes or until cooked through with an internal temperature of 165°F.
  2. Remove from the oven and sprinkle fresh parsley on top before serving.

Notes

If you don’t have Parmesan, grated mozzarella will work as a substitute, although the flavor will differ. Be cautious not to overcook the chicken, and feel free to mix up the spices as desired.
