- In a large bowl, add the cubed chicken breasts. Drizzle in the olive oil and toss to coat.
- Mix in the minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper. Give everything a gentle stir until the chicken is well-coated with all the deliciousness.
- Grab your skewers and thread the marinated chicken onto them.
Cooking
- Preheat your grill (or grill pan) over medium-high heat.
- Once hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally to ensure they’re golden and cooked through.
- Once cooked, remove the skewers from the grill, sprinkle with fresh parsley if you’d like, and serve with a side of your choice.
Notes
These skewers can be marinated ahead of time! Just keep them in the fridge for a couple of hours or even overnight. Feel free to add veggies like bell peppers, zucchini, and cherry tomatoes. A side of marinara or ranch dressing can enhance the flavors.
