  • Salt and pepper to taste
For garnish and skewering
  • Fresh parsley (for garnish, optional)
  • Skewers (if using wooden skewers, soak them in water for about 30 minutes before using to prevent burning)

Preparation
  1. In a large bowl, add the cubed chicken breasts. Drizzle in the olive oil and toss to coat.
  2. Mix in the minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper. Give everything a gentle stir until the chicken is well-coated with all the deliciousness.
  3. Grab your skewers and thread the marinated chicken onto them.
Cooking
  1. Preheat your grill (or grill pan) over medium-high heat.
  2. Once hot, place the skewers on the grill and cook for about 10-12 minutes, turning occasionally to ensure they’re golden and cooked through.
  3. Once cooked, remove the skewers from the grill, sprinkle with fresh parsley if you’d like, and serve with a side of your choice.

Notes

These skewers can be marinated ahead of time! Just keep them in the fridge for a couple of hours or even overnight. Feel free to add veggies like bell peppers, zucchini, and cherry tomatoes. A side of marinara or ranch dressing can enhance the flavors.
