Preparation
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the mayonnaise and Dijon mustard.
- Pat the chicken breasts dry with a paper towel, and sprinkle both sides with salt, pepper, and Italian seasoning.
- Dip each chicken breast into the mayo-mustard blend until well-coated.
- In another bowl, combine the breadcrumbs, parmesan cheese, minced garlic, and chopped parsley. Mix well.
- Coat the chicken breasts in the breadcrumb mixture, pressing gently to ensure the crumbs stick.
- Spray a baking sheet with olive oil or cooking spray, and arrange the coated chicken breasts on it.
Cooking
- Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and the crust is golden brown.
Serving
- Plate the chicken and enjoy, possibly with a side salad or roasted vegetables.
Notes
No panko? Regular breadcrumbs work! You can also customize the spices to your preference. Leftover chicken can be used in salads or sandwiches.
