  • 4 pieces boneless, skinless chicken breasts
  • 1 cup parmesan cheese, grated
  • 1 cup breadcrumbs (panko works wonders!)
  • 4 cloves garlic, minced Feel free to adjust to taste.
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • ¼ cup mayonnaise
  • ¼ cup Dijon mustard
  • as needed Olive oil spray or non-stick cooking spray

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix together the mayonnaise and Dijon mustard.
  3. Pat the chicken breasts dry with a paper towel, and sprinkle both sides with salt, pepper, and Italian seasoning.
  4. Dip each chicken breast into the mayo-mustard blend until well-coated.
  5. In another bowl, combine the breadcrumbs, parmesan cheese, minced garlic, and chopped parsley. Mix well.
  6. Coat the chicken breasts in the breadcrumb mixture, pressing gently to ensure the crumbs stick.
  7. Spray a baking sheet with olive oil or cooking spray, and arrange the coated chicken breasts on it.
Cooking
  1. Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and the crust is golden brown.
Serving
  1. Plate the chicken and enjoy, possibly with a side salad or roasted vegetables.

Notes

No panko? Regular breadcrumbs work! You can also customize the spices to your preference. Leftover chicken can be used in salads or sandwiches.
