Preparation
- Preheat your oven to 400°F (200°C).
- In one bowl, mix together the breadcrumbs, Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper.
- In another bowl, place the flour, and in a third bowl, beat the eggs.
Coating and Cooking
- Dip each chicken breast first into the flour, then into the beaten eggs, and finally coat generously with the breadcrumb mixture.
- Heat the olive oil or butter in a large oven-safe skillet over medium heat. Add the coated chicken breasts and sear for about 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Serving
- Let the chicken rest for a few minutes before slicing and serving. It pairs well with roasted veggies or a simple salad.
Notes
For extra crispy crust, consider broiling the chicken for the last couple of minutes. You can use tofu or pork chops as alternatives to chicken. Any leftovers can be stored in an airtight container in the fridge for up to three days.
