Ingredients

For the Crostini
  • 1 baguette 1 baguette, sliced into 1/2-inch pieces For toasting
  • 2 tablespoons 2 tablespoons olive oil For drizzling
  • Salt Salt to taste For seasoning
For the Topping
  • 1 lb 1 lb large shrimp, peeled and deveined
  • 3 cloves 3 cloves garlic, minced For sautéing
  • 1 lemon 1 lemon, juiced (plus more for garnish) Adds flavor to shrimp and avocado
  • 1 ripe avocado 1 ripe avocado For mashing
  • Fresh cilantro or parsley for garnish Optional for topping

Method

Preparation
  1. Preheat your oven to 400°F (about 200°C). Arrange the baguette slices on a baking sheet, drizzle with olive oil and sprinkle with salt. Bake for about 8-10 minutes or until golden brown.
  2. While the bread is toasting, heat the remaining olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Toss in the shrimp, season with salt and pepper, and cook for 3-4 minutes or until they're pink and opaque. Squeeze in lemon juice for a zesty kick.
  4. In a separate bowl, mash the avocado with a fork, adding a little lemon juice to keep it green and enhance the flavor.
Assembly
  1. Spread a generous amount of mashed avocado on each toasted baguette slice. Top with the garlic shrimp, and drizzle a bit more lemon juice and sprinkle with fresh cilantro or parsley.
  2. Arrange your beautiful crostini on a platter and serve.

Notes

For perfect shrimp, avoid overcooking; they should be pink and opaque. To store leftovers, keep components separate and toast bread again before serving.
