Ingredients

For the Toast
  • 1 loaf loaf of crusty bread (like sourdough or a baguette)
For the Mushroom Topping
  • 2 cups fresh Swiss mushrooms (or any mushrooms you adore)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced more garlic equals more flavor!
  • to taste Salt and pepper
  • 1 cup shredded Swiss cheese hello, melty goodness!
  • to taste Fresh parsley, chopped for that final touch of green

Method

Preparation of Bread
  1. Preheat your oven to 400°F (200°C). Slice your bread into about 1-inch thick pieces.
  2. Spread the slices out on a baking sheet and toast them until golden brown, about 5-7 minutes.
Cooking the Mushrooms
  1. In a skillet, heat the butter and olive oil on medium heat. Once melted, add the minced garlic and sauté for about 30 seconds.
  2. Add the Swiss mushrooms along with a pinch of salt and pepper. Sauté for about 5-7 minutes until tender and lightly browned.
  3. Optional: Add a splash of white wine for extra flavor.
Assemble and Bake
  1. Top each slice of toasted bread with a generous scoop of the sautéed mushrooms.
  2. Sprinkle the Swiss cheese on top and place back in the oven for 5 minutes to melt the cheese.
Serve
  1. Remove from the oven, sprinkle with fresh parsley, and serve warm.

Notes

If mushrooms produce too much liquid, increase heat to evaporate the moisture. You can substitute the cheese with Gruyère or mozzarella for variety. Store leftover mushrooms separately from the bread to maintain crunch.
