Ingredients
  

For the crust
  • 1.5 cups chocolate cookie crumbs like Oreos
  • 0.5 cups unsalted butter, melted
  • 2 tablespoons granulated sugar
For the filling
  • 1 cups creamy peanut butter the kind that sticks to your spoon
  • 1 cups powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
For the topping
  • 4-6 pieces Reese’s Peanut Butter Cups, chopped or more if you’re feeling extra
  • to taste none chocolate syrup for drizzling optional

Method
 

Prep the Crust
  1. In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix until well-combined and the texture resembles wet sand.
  2. Firmly press the mixture into the bottom and up the sides of a 9-inch pie pan.
  3. Refrigerate while preparing the filling.
Make the Filling
  1. In a large mixing bowl, beat together the creamy peanut butter, powdered sugar, and softened cream cheese until smooth and fluffy.
  2. In another bowl, whip the heavy cream and vanilla extract until peaks form. Gently fold this into the peanut butter mixture until just combined.
Fill the Crust
  1. Pour the peanut butter filling into the chilled crust, smoothing the top with a spatula.
  2. Chill in the refrigerator for at least 4 hours or until set.
Add the Toppings
  1. Once the pie is set, decorate the top with chopped Reese’s cups and drizzle with chocolate syrup if desired.
Slice and Serve
  1. Slice into generous pieces and serve. Optional: serve with a scoop of ice cream.

Notes

Letting the pie set for a few hours enhances its flavor. You can also involve kids by letting them crush the cookies for the crust.
