Ingredients
  

For the Soup
  • 6 cups chicken or vegetable broth
  • 1 tablespoon fresh ginger, minced
  • 8 oz shiitake mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 1 cup wonton wrappers
  • 1 cup bok choy, chopped
  • 1 whole lemon, juiced
  • to taste green onions, thinly sliced for garnish

Method
 

Preparation
  1. In a large pot, combine the chicken (or vegetable) broth, minced ginger, shiitake mushrooms, and garlic. Bring to a gentle simmer over medium heat.
  2. Stir in the soy sauce and sesame oil, allowing flavors to mingle for about 5 minutes.
  3. Fill wonton wrappers with your choice of filling and fold them into triangles.
  4. Gently drop the wontons into the simmering broth and let them cook for about 5-7 minutes, or until they float to the top.
  5. Toss in the chopped bok choy and let it cook for another minute.
  6. Drizzle in the lemon juice right before serving.
  7. Ladle soup into bowls, sprinkle with green onions, and serve.

Notes

You can prepare the broth and wontons ahead of time and store separately. Add red pepper flakes for a spicy kick. Store leftovers in an airtight container for up to three days, but add fresh wontons when reheating.
