Ingredients
  

For the Soup
  • 8 oz shrimp, peeled and deveined
  • 4 oz shiitake mushrooms, sliced or your favorite mushrooms
  • 3 oz rice noodles
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 2 pieces green onions, chopped
  • Fresh cilantro, for garnish
  • Optional: chili flakes, for a spicy kick

Method
 

Cooking Steps
  1. In a large pot, heat the sesame oil over medium heat. Once hot, toss in the minced garlic and grated ginger and sauté until fragrant, about 1-2 minutes.
  2. Pour in the chicken or vegetable broth and bring it to a simmer. Add the rice noodles and cook according to package instructions, usually around 3-5 minutes, until they're tender but still have a bit of bite.
  3. Drop in the shrimp and sliced shiitake mushrooms. Cook for 2-3 minutes or until the shrimp turns pink and the mushrooms are tender.
  4. Stir in the soy sauce and lime juice. Taste and add a pinch of chili flakes if desired.
  5. Ladle the soup into bowls and top with chopped green onions and fresh cilantro. Squeeze additional lime for extra flavor if desired.

Notes

Feel free to substitute chicken, tofu, or add more vegetables for a vegetarian option. This soup is versatile; include any leftover veggies you have!
