Ingredients
  

For the Brie
  • 1 wheel Brie cheese (8 ounces) About the size of a small round
  • 1 sheet puff pastry, thawed
For the Caramelized Apples
  • 2 medium apples, peeled, cored, and thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh thyme leaves Plus more for garnish if desired
  • 1 teaspoon lemon juice
  • to taste salt and pepper
For Serving
  • as needed sliced baguette or crackers Optional for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter.
  3. Add the sliced apples, brown sugar, lemon juice, thyme, and a pinch of salt and pepper. Sauté for about 5-7 minutes, or until the apples are soft and slightly caramelized.
  4. Take the puff pastry out and roll it out a bit if it’s too thick. Place the Brie in the center of the pastry. Spoon the caramelized apples over the Brie, reserving some for topping later.
  5. Fold the pastry around the cheese, pinching it to seal. Brush the top with an egg wash (1 egg whisked with 1 tablespoon of water) for a golden finish.
Baking
  1. Place the wrapped Brie on a baking sheet lined with parchment paper and bake for 20-25 minutes, until the pastry is puffed and golden.
Serving
  1. Let it cool for about 10 minutes. Serve with remaining caramelized apples and a sprinkle of fresh thyme on top alongside sliced baguette or crackers.

Notes

You can prepare the caramelized apples ahead of time and store them in the fridge. For a crunch, add nuts like walnuts or pecans. Drizzle with honey for extra sweetness if desired.
