Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, melt the butter.
- Add the sliced apples, brown sugar, lemon juice, thyme, and a pinch of salt and pepper. Sauté for about 5-7 minutes, or until the apples are soft and slightly caramelized.
- Take the puff pastry out and roll it out a bit if it’s too thick. Place the Brie in the center of the pastry. Spoon the caramelized apples over the Brie, reserving some for topping later.
- Fold the pastry around the cheese, pinching it to seal. Brush the top with an egg wash (1 egg whisked with 1 tablespoon of water) for a golden finish.
Baking
- Place the wrapped Brie on a baking sheet lined with parchment paper and bake for 20-25 minutes, until the pastry is puffed and golden.
Serving
- Let it cool for about 10 minutes. Serve with remaining caramelized apples and a sprinkle of fresh thyme on top alongside sliced baguette or crackers.
Notes
You can prepare the caramelized apples ahead of time and store them in the fridge. For a crunch, add nuts like walnuts or pecans. Drizzle with honey for extra sweetness if desired.
