Preparation
- Start by peeling and cubing your potatoes. They should be nice and bite-sized.
Cooking
- In a large pot, combine the cubed potatoes with salted water and bring to a boil. Cook until they’re tender, about 15 minutes. Drain and mash until creamy.
- In a mixing bowl, combine the mashed potatoes with the shredded cheese, fresh herbs, and olive oil. Season with salt and pepper.
- Spread the mixture evenly in a baking dish. Pour the vegetable broth over the top.
- Preheat your oven to 375°F (190°C) and bake for about 30 minutes or until the top is golden and crispy.
- Remove from the oven and allow it to cool for just a minute. Slice and serve.
Notes
For cheese choices, feel free to mix and match. Fresh herbs are best, but dried herbs can also be used. For an extra crispy top, broil for a couple of minutes at the end—watch closely to avoid burning.
