Preparation
- Marinate the steak in buttermilk for at least 30 minutes.
- In a bowl, whisk together flour, garlic powder, onion powder, salt, and pepper.
Cooking
- Heat vegetable oil in a large skillet over medium-high heat.
- Dredge the marinated steak in the seasoned flour, shaking off any excess.
- Fry the coated steak for 3-4 minutes on each side until golden brown.
- Transfer steak to a plate lined with paper towels to drain excess oil.
- For the gravy, discard most oil leaving about 4 tablespoons in the skillet with brown bits.
- Sprinkle leftover flour into the pan and whisk over medium heat for 1-2 minutes.
- Gradually add milk while stirring until gravy thickens; season with salt and pepper.
- Serve the gravy over the warm, crispy steak.
Notes
For best results, do not skip the buttermilk marinade and ensure oil is hot enough for frying.
