Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, combine crumbled feta, ricotta, oregano, garlic powder, and parsley. Mix well.
- Unroll phyllo dough and keep it covered with a damp cloth.
- Take one sheet of phyllo, brush lightly with melted butter, and layer another sheet on top. Repeat for 3-4 sheets.
- Place about a tablespoon of filling at one end of the stacked phyllo, roll tightly, and seal the edges with butter.
Baking
- Place rolls seam-side down on a baking sheet lined with parchment paper, brush tops with butter, and bake for 20-25 minutes until golden brown.
Making Spiced Honey
- In a small saucepan over low heat, combine honey and cayenne pepper. Stir until warm and well combined.
Serving
- Once rolls are golden and crispy, drizzle generously with spiced honey and serve immediately.
Notes
Phyllo dough can tear; overlap pieces if needed. You can experiment with different fillings like spinach or roasted red peppers. Rolls can be assembled in advance and frozen; bake from frozen.
