Method
Mixing It Up
- In a mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it’s frothy.
Adding Flour
- Stir in the flour, salt, 1 tablespoon of olive oil, garlic, and rosemary. Mix until it forms a sticky dough.
Kneading
- Lightly flour your surface and knead the dough for about 5-7 minutes until it’s smooth.
First Rise
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for about 1 hour, or until it doubles in size.
Preparing for Muffins
- Preheat your oven to 425°F (220°C). Grease a muffin tin with cooking spray or olive oil.
- Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape them into balls and place them into the muffin tin.
Second Rise
- Cover the muffins with the kitchen towel again and let them rise for another 20-30 minutes.
Finishing Touches
- Drizzle the tops of the muffins with the remaining olive oil and sprinkle with coarse salt.
Bake
- Pop them in the oven for about 15-20 minutes until they’re golden brown. Let them cool for a couple of minutes before serving.
Notes
For herb variations, substitute rosemary with thyme or oregano. Mix in some dried Italian herbs for extra flavor. Store in an airtight container for 2-3 days or freeze for longer storage.
