Muffin Ingredients
  • 2 cups all-purpose flour
  • 1 cup warm water
  • 1 envelope instant yeast (2 1/4 teaspoons)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 5 tablespoons olive oil (plus more for drizzling)
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 3 cloves garlic, minced
  • to taste coarse salt for topping

Method
 

Mixing It Up
  1. In a mixing bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it’s frothy.
Adding Flour
  1. Stir in the flour, salt, 1 tablespoon of olive oil, garlic, and rosemary. Mix until it forms a sticky dough.
Kneading
  1. Lightly flour your surface and knead the dough for about 5-7 minutes until it’s smooth.
First Rise
  1. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for about 1 hour, or until it doubles in size.
Preparing for Muffins
  1. Preheat your oven to 425°F (220°C). Grease a muffin tin with cooking spray or olive oil.
  2. Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape them into balls and place them into the muffin tin.
Second Rise
  1. Cover the muffins with the kitchen towel again and let them rise for another 20-30 minutes.
Finishing Touches
  1. Drizzle the tops of the muffins with the remaining olive oil and sprinkle with coarse salt.
Bake
  1. Pop them in the oven for about 15-20 minutes until they’re golden brown. Let them cool for a couple of minutes before serving.

Notes

For herb variations, substitute rosemary with thyme or oregano. Mix in some dried Italian herbs for extra flavor. Store in an airtight container for 2-3 days or freeze for longer storage.
