  • 4 medium golden potatoes, thinly sliced (about 1 ½ lbs)
  • 1 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves (plus extra for garnish)

  • 4 oz goat cheese, crumbled (or feta, if you prefer)
  • 1 tablespoon unsalted butter, for greasing your pan

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice the golden potatoes thinly, about 1/8 inch thick.
  3. In a small saucepan, combine the balsamic vinegar, olive oil, thyme leaves, salt, and pepper. Bring to a gentle simmer and let it reduce by half, approximately 10 minutes.
  4. Grease a round baking dish or pie pan with unsalted butter and start layering the sliced potatoes in a circular pattern, slightly overlapping each slice.
  5. Drizzle the balsamic mixture generously over the layered potatoes.
  6. Sprinkle the crumbled goat cheese over the top.
  7. Bake for about 40–45 minutes, or until the potatoes are tender and the top is golden brown.
  8. Let it cool for a few minutes and garnish with extra thyme leaves before serving.

Notes

Feel free to customize with herbs such as rosemary or sage. Store leftovers tightly covered in plastic wrap in the refrigerator for up to three days.
