Ingredients
  

For the Toasts
  • 1 loaf loaf of crusty French bread or rustic Italian bread
  • 2 cups mushrooms (button or cremini, sliced)
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until tender and golden.
  3. Add the minced garlic and sauté for another minute. Then, sprinkle with salt and pepper and stir before removing from heat.
  4. Slice the French bread into 1-inch thick pieces if not done already.
Assembly and Baking
  1. Arrange the bread slices on a baking sheet and spoon the cheesy mushroom mixture generously onto each slice.
  2. Top with shredded mozzarella and a sprinkle of Parmesan cheese.
  3. Bake in the oven for about 10-15 minutes until the cheese is bubbling and the bread is slightly crisp.
  4. Once out of the oven, sprinkle with fresh parsley before serving.

Notes

For added flavor, mix different types of mushrooms. Substitute with vegan cheese for a dairy-free option. These toasts can be made ahead by preparing the mushroom mixture in advance.
