Preparation
- In a small bowl, combine the softened butter, honey, thyme, a pinch of salt, and pepper. Mix well and set aside.
- Lay out four slices of bread on a clean surface and spread a generous layer of thyme honey butter on each.
- On the buttered side of each slice, layer brie slices followed by ham and apple slices. Top with more brie.
- Place another slice of buttered bread on top with the butter side facing up.
Grilling
- Heat a skillet over medium heat. Once hot, add the sandwiches and cook for about 4-5 minutes until golden brown and crispy.
- Flip the sandwiches and cook the other side until golden and the brie is melted.
Serving
- Remove the sandwiches from the skillet and let them sit for a minute. Slice in half and serve with a side of soup or salad.
Notes
Grate the brie for a gooier texture. Use a cast iron skillet for even cooking. Add arugula or spinach for extra greens.
