Ingredients
  

For the sandwich
  • 8 slices slices of rustic bread (sourdough or favorite variety)
  • 6-8 ounces thinly sliced ham Choose a flavorful variety
  • 6 ounces brie cheese Cut into slices or chunks
  • 1 apple apple, sliced Preferably a sweet variety like Fuji or Honeycrisp
  • 1/4 cup unsalted butter Softened for spreading
  • 1 tablespoon honey Adjust based on your sweet tooth
  • 1 tablespoon fresh thyme leaves Or a teaspoon of dried thyme if needed
  • Salt and pepper To taste

Method
 

Preparation
  1. In a small bowl, combine the softened butter, honey, thyme, a pinch of salt, and pepper. Mix well and set aside.
  2. Lay out four slices of bread on a clean surface and spread a generous layer of thyme honey butter on each.
  3. On the buttered side of each slice, layer brie slices followed by ham and apple slices. Top with more brie.
  4. Place another slice of buttered bread on top with the butter side facing up.
Grilling
  1. Heat a skillet over medium heat. Once hot, add the sandwiches and cook for about 4-5 minutes until golden brown and crispy.
  2. Flip the sandwiches and cook the other side until golden and the brie is melted.
Serving
  1. Remove the sandwiches from the skillet and let them sit for a minute. Slice in half and serve with a side of soup or salad.

Notes

Grate the brie for a gooier texture. Use a cast iron skillet for even cooking. Add arugula or spinach for extra greens.
