Marinate the Chicken
- In a bowl, mix the olive oil, lemon juice, oregano, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for about 10–15 minutes while you prepare the other ingredients.
Cook the Chicken
- Heat a grill pan or skillet over medium-high heat. Cook the chicken for about 6-7 minutes on each side or until cooked through.
Prepare the Bowls
- While the chicken is cooking, prepare your quinoa or couscous according to package instructions. In a large bowl, layer the quinoa or couscous with diced cucumber, halved cherry tomatoes, sliced red onion, olives, and crumbled feta cheese.
Make the Dressing
- In a small bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper until well combined.
Assemble Your Bowls
- Once the chicken is cooked, slice it and layer it over the quinoa base. Drizzle the dressing over everything and sprinkle with fresh parsley if desired.
Notes
Don’t overcook the chicken to avoid dryness. Consider using rotisserie chicken for a faster option. Presentation can be simple.
