Ingredients
  

For the Meatballs
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 large egg
  • to taste Salt and pepper
For the Fresh Tzatziki
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and excess water squeezed out
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • to taste Salt

Method
 

Preparation of Meatballs
  1. In a large bowl, combine all the meatball ingredients: ground chicken, breadcrumbs, Parmesan, parsley, garlic, oregano, egg, salt, and pepper. Mix until well combined.
Shaping and Baking
  1. Preheat your oven to 400°F (200°C). Roll the mixture into small balls, about the size of golf balls. Place them on a parchment-lined baking sheet.
  2. Bake the meatballs for about 20 minutes or until they are golden brown and cooked through.
Making the Tzatziki
  1. While the meatballs are baking, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, and a pinch of salt in a separate bowl. Mix until well blended.
Serving
  1. Serve the meatballs warm with a generous dollop of tzatziki on top or on the side.

Notes

For batch cooking: Make a double batch of meatballs and freeze them for quick meals later. Use fresh mint or cilantro if you don't have dill.
