Preparation of Meatballs
- In a large bowl, combine all the meatball ingredients: ground chicken, breadcrumbs, Parmesan, parsley, garlic, oregano, egg, salt, and pepper. Mix until well combined.
Shaping and Baking
- Preheat your oven to 400°F (200°C). Roll the mixture into small balls, about the size of golf balls. Place them on a parchment-lined baking sheet.
- Bake the meatballs for about 20 minutes or until they are golden brown and cooked through.
Making the Tzatziki
- While the meatballs are baking, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, and a pinch of salt in a separate bowl. Mix until well blended.
Serving
- Serve the meatballs warm with a generous dollop of tzatziki on top or on the side.
Notes
For batch cooking: Make a double batch of meatballs and freeze them for quick meals later. Use fresh mint or cilantro if you don't have dill.
