Ingredients
  

For the Meatballs
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs preferably whole wheat for a healthy twist
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced because garlic is life
  • 1 teaspoon dried oregano
  • 1 teaspoon dried mint or 2 tablespoons fresh mint, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 large egg, beaten
  • Olive oil for frying
For the Tzatziki Sauce
  • 1 cup Greek yogurt the hero of this dish
  • 1/2 cup cucumber, finely grated and drained
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill or mint, chopped
  • Salt and pepper to taste

Method
 

Preparation of Tzatziki Sauce
  1. In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, and fresh herbs. Add a pinch of salt and pepper to taste, then mix it all together. Set it aside in the fridge to let those flavors meld together beautifully.
Preparing the Meatball Mixture
  1. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, oregano, mint, salt, pepper, and beaten egg. Use your hands to mix everything until just combined, being careful not to overmix.
Forming the Meatballs
  1. Roll the mixture into golf ball-sized meatballs.
Cooking the Meatballs
  1. Heat olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking for about 5-7 minutes until golden brown and fully cooked (check with a meat thermometer—165°F is the magic number).
Serving
  1. Plate the meatballs and serve with the tzatziki sauce either family-style or plated individually.

Notes

Don't skip on seasoning; taste as you go. If you don’t have fresh herbs, dried ones will work, but fresh herbs elevate the experience. These meatballs are versatile and can be served in pita wraps, on top of salad, or with quinoa.
