Preparation
- In a large mixing bowl, combine the ground chicken, breadcrumbs, chopped parsley, Parmesan cheese, egg, minced garlic, dried oregano, lemon zest, salt, and pepper. Mix well.
- Take a tablespoon-sized amount of the mixture and roll it into a ball between your palms, forming about 18-20 meatballs.
Cooking
- Preheat your oven to 400°F (200°C).
- Place the meatballs on a parchment-lined baking sheet, leaving space between them. Bake for about 20-25 minutes, or until golden brown and cooked through.
Making the Tzatziki Sauce
- In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, fresh herbs, and salt. Stir until combined.
Serving
- Serve the meatballs warm with a generous dollop of tzatziki sauce.
Notes
You can prepare the meatball mixture a day in advance and bake them when ready. Freeze any leftovers in a sealed container for up to three months.
