Ingredients
  

For the Meatballs
  • 1 pound ground chicken
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup grated Parmesan cheese
  • 1 large egg to bind the mixture
  • 3 cloves garlic, minced adds flavor
  • 1 tablespoon dried oregano
  • 1 unit zest of 1 lemon for flavor
  • to taste salt and pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 medium cucumber, grated and excess water squeezed out to prevent a watery sauce
  • 2 cloves garlic, minced more is better!
  • 1 tablespoon olive oil
  • 1 tablespoon vinegar white or red
  • to taste fresh dill or mint, chopped use whichever herb you prefer
  • to taste salt

Method
 

Preparation
  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, chopped parsley, Parmesan cheese, egg, minced garlic, dried oregano, lemon zest, salt, and pepper. Mix well.
  2. Take a tablespoon-sized amount of the mixture and roll it into a ball between your palms, forming about 18-20 meatballs.
Cooking
  1. Preheat your oven to 400°F (200°C).
  2. Place the meatballs on a parchment-lined baking sheet, leaving space between them. Bake for about 20-25 minutes, or until golden brown and cooked through.
Making the Tzatziki Sauce
  1. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, fresh herbs, and salt. Stir until combined.
Serving
  1. Serve the meatballs warm with a generous dollop of tzatziki sauce.

Notes

You can prepare the meatball mixture a day in advance and bake them when ready. Freeze any leftovers in a sealed container for up to three months.
