Greek Chicken with Tzatziki

Ingredients
  

For the Greek Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 pieces cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt to taste

Method
 

Preparation
  1. In a large bowl, mix together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts and make sure they’re fully coated in the marinade. Let them sit for at least 30 minutes.
  2. While the chicken is marinating, mix together yogurt, grated cucumber, minced garlic, lemon juice, dill, and a pinch of salt in another bowl. Chill in the fridge.
Cooking
  1. Preheat your grill or pan to medium-high heat.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  3. Slice the chicken, serve it up on a plate with the tzatziki sauce on the side.

Notes

Feel free to add red pepper flakes for spice or swap oregano for rosemary. You can pan-sear or bake the chicken if grilling is not available. If your tzatziki is too thick, add a splash of water or more lemon juice.
