  • 1 crust pizza crust (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach (washed and chopped)
  • 1/2 cup roasted garlic whole bulbs roasted until golden and soft
  • 3 tablespoons olive oil
  • salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1/2 cup crumbled feta cheese adds extra Greek flair
  • fresh basil leaves for garnish

Method
 

Preparation
  1. Preheat your oven to 475°F (245°C).
  2. Roll out the pizza crust on a floured surface to your desired thickness.
  3. In a bowl, mix together the ricotta cheese, mozzarella, salt, pepper, and oregano.
  4. Spread the cheese mixture generously over the pizza crust.
  5. In a pan, heat olive oil over medium heat, then sauté the fresh spinach until wilted.
  6. Smush the roasted garlic and add it to the pan, mixing with the spinach.
  7. Spread the wilted spinach and garlic over the cheese layer and top with crumbled feta.
  8. Bake for 12-15 minutes until the crust is golden brown and the cheese is bubbling.
  9. Allow the pizza to cool for a minute before slicing, and garnish with fresh basil leaves.

Notes

Make it your own by adding ingredients like chicken or caramelized onions. Using a pizza stone can enhance crust crispiness. Store leftovers in the fridge for up to 3 days.
