Method
Roast the Garlic
- Preheat your oven to 375°F (190°C) and toss the minced garlic with olive oil and a pinch of salt in a small baking dish. Roast in the oven for about 10-15 minutes until fragrant and golden.
Sauté the Spinach
- While garlic is roasting, heat a splash of olive oil in a skillet over medium heat. Add the spinach and a little salt and pepper; sauté until wilted and deep green (about 4-5 minutes).
Prepare the Dough
- Roll out the pizza dough on a floured surface to your desired thickness and transfer to a baking sheet or pizza stone.
Combine and Spread
- In a mixing bowl, combine the roasted garlic mixture, sautéed spinach, ricotta cheese, and oregano. Spread this mixture over the pizza dough, leaving some room at the edges for the crust.
Add Cheese and Bake
- Sprinkle mozzarella and feta cheese on top. Add red pepper flakes if desired. Bake for 15-20 minutes until the crust is golden and cheese is bubbly.
Slice and Serve
- Remove pizza from the oven, let cool for a minute, slice, and serve warm.

You can use homemade pizza dough for a more personalized touch. Additional greens like kale or arugula can be added for extra nutrition. For a gluten-free option, substitute the crust as needed.
