Ingredients
  

For the Marinade
  • 1 pound Steak (flank or sirloin)
  • 2 tablespoons Olive oil
  • 1/4 cup Balsamic vinegar
  • 3 cloves Garlic (minced)
  • 1 tablespoon Honey
  • Salt and pepper (to taste)
For the Salad
  • 4 cups Mixed greens (such as arugula, spinach, or romaine)
  • 1 cup Cherry tomatoes (halved)
  • 1/2 cup Red onion (thinly sliced)
  • 1 Cucumber (sliced)
  • 1/2 cup Feta cheese (crumbled)
  • 1 Avocado (diced) Optional, for extra creaminess

Method
 

Preparation
  1. Whisk together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper in a small bowl.
  2. Place steak in a shallow dish or ziplock bag and pour marinade over it. Let marinate for at least 15 minutes.
Cooking
  1. Preheat grill or grill pan to medium-high heat.
  2. Remove steak from marinade and discard the leftover marinade.
  3. Grill steak for about 5-7 minutes per side or until cooked to your liking.
Assembly
  1. Let steak rest for a few minutes, then slice.
  2. In a big bowl, mix greens, cherry tomatoes, red onion, cucumber, and diced avocado.
  3. Toss the salad mix with sliced steak, sprinkle feta cheese, and drizzle additional balsamic vinegar if desired.

Notes

Consider substituting steak with chicken breast or tofu. Store leftovers in separate containers for best freshness. Feel free to experiment with seasonal veggies.
